I answer part of my own question... I found a Winamp plug-in that works pretty well for removing vocals and/or certain other elements on stereo tracks. It's like reversing the polarity on one speaker so sounds spread over both channels neutralize each other. Needless to say, it won't work for oldies in mono.
It doesn't always take out what you want, but I heard things I'd never noticed that were buried in the mixes on tracks I've listened to a thousand times. Sometimes it leaves background vocals, sometimes it wipes bass lines or drums, all depending on the mix. The higher the source quality (CD, wav) the better. Mp3s at 160kbps or lower sound watery.

Careful installing - make sure it goes in your program files/winamp/plugins folder, which isn't the default setting. If you forget, there's a Read Me that'll tell you which dll file to move.
